Candied Yams

Candied Yams - Marshmallow Topped Sweet Potatoes


350 degree oven

2 cans Yams (Sweet potatoes)
1 bag Kraft Mini or large marshmallows (yes, it makes a difference in taste)
1/2 - 1 can Sweetened condensed milk
1 cup Brown Sugar
1 egg
1/2 stick butter
Cinnamon, if desired - 1 teaspoon

Drain yams (sweet potatoes) 
Melt butter and place into a casserole dish
In a separate bowl, mix the following ingredients:
  • Mash sweet potatoes with a potato masher until the consistency of mashed potatoes
  • Add brown sugar
  • Beat egg with a fork and add to mixture
  • Add condensed milk - 1 can may be used, or less. Don't make it too runny.
  • Stir all ingredients - add cinnamon, if desired.

Place ingredients into a casserole dish with melted butter at the bottom.
Place marshmallows on top of ingredients - NOTE: Leave room around the edges of the marshmallows. Do not place marshmallows to the edge or they will puff up and possibly run over the edge of the dish.

Bake uncovered at 350 degrees for approximately 30 minutes, or until marshmallows are slightly browned.
